All started
with a rich and influential person Ludovico Trevisan
a mundane cardinal that became a patriarch of
Aquileja in 1439 and then the Pope’s Chamberlain the
following year. Trevisan nicked named cardinal
Lucullo (Lucullus - roman history), because together
with his personal chef, they would organize
extravagant banquets and would generously spend on a
daily basis 20 Ducati (about $2000). His Chef
Master Martino waved goodbye to the medieval ways of
cooking and slowly disposing of these methods, gave
rise to new, simple and natural culinary attitudes.
“Liber de
arte coquinaria”, the recipe book written by
Master Martino de Rossi remained undiscovered up
until 1474, and materialized thanks to the poet
Bartolomeo Sacchi who would employ the recipes of
the chef and insert them into his manual: “De
onesta Voluptate et valetudine”, how to confront
life in a tranquil, wise and sanitized manner…

Restaurant, which is on the wake of a cultural
legacy, launching itself into a new era by following
the trends and pallet requirements, balance is the
order of the day for Chef Giuseppe Morra who
recommends simple eccentric dishes and tastes that
harmonize the pallet and satisfy the craving. |
